Gluten Free Blueberry Muffins

Light, airy, open texture (#GBBO).  I was shocked.

INGREDIENTS

  • 1 1/2 c almond flour (finer than almond meal)
  • 1 c gluten free baking flour (Trader Joe's)
  • 1 3/4 t baking powder
  • 1/2 t xanthan gum
  • 1/4 t salt

  • 1 mashed extra ripe banana
  • 1/4 c honey
  • 1/3 c almond oil
  • 1/3 c unsweetened almond milk
  • 3 large eggs, slightly beaten
  • 1/2 t vanilla
  • 1 c fresh or frozen blueberries

DIRECTIONS

  • Combine all dry ingredients
  • Add in all wet ingredients; mix until well combined
  • Fold in blueberries
  • Spoon into greased muffin tin (I made 10 large muffins, and added water to the 2 extra muffin cups for steam)
  • Dust muffins with cinnamon
  • Bake at 350 about 25 minutes
  • Allow to cool a bit before removing

Chocolate Granola + Strawberries & Coconut

Really happy with this great granola I just made. Been eating it all day from breakfast to dessert- yum.

INGREDIENTS

  • 4c old fashioned oats
  • 1c slivered almonds
  • 1/3 - 1/2c cocoa powder
  • 1t sea salt

  • 1/2c melted butter
  • 1/4c+ honey
  • 1T vanilla

  • 2/3c unsweetened coconut chips
  • 1/3c+ semi sweet chocolate chips
  • 1 bag (~1.5c) dehydrated strawberries (Trader Joe's for the win!)



DIRECTIONS

  • Combine dry ingredients
  • Add wet ingredients and mix until well combined
  • Spread onto a baking sheet covered with parchment paper
  • Bake at 350 for 20 minutes
  • Add coconut chips and cook 5 more minutes until lightly browned
  • Remove from oven; add strawberries and chocolate chips
  • Cool and store air tight

Chocolate Chip Cookies

Gluten, dairy, and refined sugar free. No inflammatory ingredients, and still actually tasted like normal cookies.

Me and hubs each immediately ate 5... oops.



INGREDIENTS:

-2 eggs
-2/3c maple syrup
-1c coconut oil
-1T vanilla

-3 cups flour (1c blitzed oats, 1c almond meal, 1c GF flour blend)
-1t baking powder
-1t baking soda
-1t xanthan gun
-1/4t sea salt
-1 dash cinnamon

-1 bag dark chocolate mini chips


DIRECTIONS:

-beat eggs in standing mixer
-beat in remaining liquid ingredients

-combine dry ingredients in a separate bowl
-slowly mix together dry and wet ingredients

-slowly add chocolate chips

-cover and refrigerate dough for 15 minutes
-preheat oven to 350 and bake cookies for 10-20 minutes
