INGREDIENTS:
- 1 3/4 c gluten free flour
- 2t baking powder
- 1/4t baking soda
- 1/2t xanthan gum
- 1t cinnamon
- 1/4t nutmeg
- 1/2t salt

- 1/2c butter, softened
- 1/3c honey
- 2T molasses
- 2 eggs
- 2 ripe bananas, mashed
- 1/2 - 1 c walnut pieces
DIRECTIONS:
- Mix all dry ingredients in a separate bowl
- In a mixer, cream butter, honey and molasses
- Beat in one egg at a time
- Alternate adding dry ingredients and mashed banana
- Beat all together for 30 seconds until well combined
- Gently mix in walnuts
- Add to greased muffin tins
- Bake at 375, 20-25 minutes
(Mine made only 11 large muffins)
