GF Banana Nut Muffins


INGREDIENTS:

  • 1 3/4 c gluten free flour
  • 2t baking powder
  • 1/4t baking soda
  • 1/2t xanthan gum
  • 1t cinnamon
  • 1/4t nutmeg 
  • 1/2t salt

  • 1/2c butter, softened
  • 1/3c honey
  • 2T molasses
  • 2 eggs
  • 2 ripe bananas, mashed
  • 1/2 - 1 c walnut pieces


DIRECTIONS:

  • Mix all dry ingredients in a separate bowl
  • In a mixer, cream butter, honey and molasses
  • Beat in one egg at a time
  • Alternate adding dry ingredients and mashed banana
  • Beat all together for 30 seconds until well combined
  • Gently mix in walnuts
  • Add to greased muffin tins
  • Bake at 375, 20-25 minutes
(Mine made only 11 large muffins)
